When a repo name is given (lab build shrimp --stop / lab build shrimp --status), scope the operation to that repo's binaries from SERVICE_MAP instead of walking every _server/_admin/_web binary in ~/hero/bin.

Fixes lab build shrimp --stop accidentally stopping hero_aibroker_server and other unrelated services.
